- 1 cup chopped onion
- ¾ cup chopped carrots
- 3 garlic cloves, minced
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- ¾ cup chopped celery
- 1 tablespoon chili powder
- 1½ cups chopped mushrooms
- 1 can (28 ounces) whole peeled tomatoes, chopped with liquid
- 1 can (19 ounces) kidney beans with liquid
- 1 can (11 ounces) whole kernel corn, undrained
- 1 tablespoon ground cumin
- 1½ teaspoons dried oregano
- 1½ teaspoons dried basil
- Salt and black pepper to taste
Directions
- Heat vegetable oil in a large pot over medium heat. Add onions, carrots, and garlic. Cook until softened and fragrant.
- Stir in green bell pepper, red bell pepper, celery, and chili powder. Cook for about 5 to 6 minutes until vegetables become tender.
