  • 1½ cups chopped mushrooms
  • 1 can (28 ounces) whole peeled tomatoes, chopped with liquid
  • 1 can (19 ounces) kidney beans with liquid
  • 1 can (11 ounces) whole kernel corn, undrained
  • 1 tablespoon ground cumin
  • 1½ teaspoons dried oregano
  • 1½ teaspoons dried basil
  • Salt and black pepper to taste

Directions

  1. Heat vegetable oil in a large pot over medium heat. Add onions, carrots, and garlic. Cook until softened and fragrant.
