Ingredients
- 4 large baking potatoes
- 8 strips bacon
- 1 cup sour cream
- 1 cup shredded Cheddar cheese, divided
- 8 green onions, sliced, divided
- ½ cup milk
- 4 tablespoons butter
- ½ teaspoon salt
- ½ teaspoon black pepper
Directions
- Preheat oven to 350°F (175°C)
- Bake potatoes for about 1 hour until tender
- Let potatoes cool slightly until easy to handle
- Cook bacon in a skillet until crispy, then crumble it
- Slice potatoes in half lengthwise and scoop the flesh into a bowl
- Reserve the potato skins for filling
