Ingredients

  • 1 (1-pound) sweet potato, whole with skin
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1/2 cup milk
  • 2 large eggs, room temperature
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 (9-inch) unbaked pie crust

These ingredients work well for a traditional southern sweet potato pie recipe and can easily be adapted for variations such as sweet potato pie with evaporated milk or sweet potato pie with condensed milk.

Directions

  1. Place the whole sweet potato in a large pot and cover it completely with water. Bring to a boil and cook for 40 to 50 minutes, or until the sweet potato is very tender when pierced with a fork.
  2. Drain the water and allow the sweet potato to cool slightly. Peel off and discard the skin.
  3. Preheat the oven to 350°F (175°C).
  4. Transfer the cooked sweet potato flesh to a large mixing bowl. Add the softened butter and beat with a hand mixer until smooth and well blended.
  5. Add the sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract. Beat on medium speed until the mixture becomes completely smooth and creamy, with no visible lumps.
  6. Pour the sweet potato filling evenly into the unbaked pie crust.
  7. Place the pie on the center rack of the oven and bake for 55 to 60 minutes, or until a knife inserted into the center comes out clean.
  8. Remove the pie from the oven and allow it to cool completely before slicing and serving.
