Ingredients
- 1 (1-pound) sweet potato, whole with skin
- 1/2 cup butter, softened
- 1 cup white sugar
- 1/2 cup milk
- 2 large eggs, room temperature
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 (9-inch) unbaked pie crust
These ingredients work well for a traditional southern sweet potato pie recipe and can easily be adapted for variations such as sweet potato pie with evaporated milk or sweet potato pie with condensed milk.
Directions
- Place the whole sweet potato in a large pot and cover it completely with water. Bring to a boil and cook for 40 to 50 minutes, or until the sweet potato is very tender when pierced with a fork.
- Drain the water and allow the sweet potato to cool slightly. Peel off and discard the skin.
- Preheat the oven to 350°F (175°C).
- Transfer the cooked sweet potato flesh to a large mixing bowl. Add the softened butter and beat with a hand mixer until smooth and well blended.
- Add the sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract. Beat on medium speed until the mixture becomes completely smooth and creamy, with no visible lumps.
- Pour the sweet potato filling evenly into the unbaked pie crust.
- Place the pie on the center rack of the oven and bake for 55 to 60 minutes, or until a knife inserted into the center comes out clean.
- Remove the pie from the oven and allow it to cool completely before slicing and serving.
