Ingredients

  • 1 ¼ pounds Yukon Gold potatoes, peeled and cubed
  • 3 cloves garlic, halved
  • 1 pound lean ground beef
  • 2 tablespoons all-purpose flour
  • 4 cups frozen mixed vegetables
  • ¾ cup beef broth
  • 3 tablespoons ketchup
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¾ cup light sour cream
  • ½ cup shredded Cheddar cheese, divided

How to Make

  • Boil potatoes and garlic in a large pot of water until tender, about 20 minutes. Drain and set aside.
  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned.
  • Stir in flour, mixed vegetables, beef broth, ketchup, salt, and pepper. Cook for about 5 minutes until thickened.
  • Transfer the beef mixture to a casserole dish.
  • Mash the drained potatoes with sour cream and half of the Cheddar cheese until smooth.
  • Spread mashed potatoes evenly over the beef mixture, sealing the edges.
  • Sprinkle with the remaining Cheddar cheese.
  • Bake for 20–25 minutes until the top is golden and slightly crisp.
  • Let cool for 15 minutes before serving.
