Ingredients

  • 12 large sea scallops, about 1 1/4 to 1 1/2 pounds
  • 2 teaspoons all purpose flour, optional
  • Salt to taste
  • Fresh ground black pepper to taste
  • 2 tablespoons avocado oil or vegetable oil

Garlic Basil Butter

  • 1 1/2 tablespoons butter
  • 2 garlic cloves, minced
  • 1 cup fresh basil leaves
  • 3 to 4 lemon slices

Directions

  • Pat the scallops very dry with paper towels to remove excess moisture.
  • Lightly dust one side of the scallops with flour if using, then season with salt and pepper.
  • Heat a wide skillet over medium high heat and add the oil. Allow the oil to become hot and shimmering.
  • Place the scallops in the skillet seasoned side down. Cook without moving them for about 2 minutes until a golden crust forms.
  • While the first side cooks, dust the top side lightly with flour and season with salt and pepper.
  • Flip the scallops carefully and cook for another 1 to 2 minutes.
  • Add butter and minced garlic to the pan, swirling as the butter melts.
  • Remove from heat and stir in fresh basil leaves and lemon slices.
  • Serve immediately while warm.
