Ingredients

Directions
- Wash and thoroughly dry all vegetables.
- Chop the lettuce, tomatoes, cucumber, onion, and carrots into bite-sized pieces.
- Place all the prepared vegetables into a large mixing bowl.
- Add chickpeas or boiled beans, if using.
- In a small bowl, whisk together olive oil, lemon juice or vinegar, salt, and black pepper.
- Pour the dressing over the salad and toss gently until everything is evenly coated.
