Roast Beef Recipe

Ingredients
2 teaspoons olive oil
4 pounds boneless chuck roast
1 onion, chopped
2 cloves garlic, minced
2 bay leaves
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions
- Preheat the oven to 325°F (165°C).
- Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Place the chuck roast in the pot and sear for about 4 minutes. Turn the meat with tongs and sear the other side for another 3 to 4 minutes until browned. Remove the roast from the pot.
- Place the chopped onion, minced garlic, and one bay leaf in the bottom of the pot. Sprinkle with salt and black pepper. Return the seared roast to the pot and place the remaining bay leaf on top of the meat. Cover the pot with a lid.
- Cook in the preheated oven for about 30 minutes. Reduce the oven temperature to 300°F (150°C) and continue cooking for about 1 1/2 hours, or until the roast becomes tender. The internal temperature of the beef should reach about 145°F (65°C).
- Remove the roast from the oven and let it rest for 10 to 15 minutes before slicing. Serve warm with the juices from the pot.
