Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1/2 cup finely chopped yellow or white onion
  • 1/4 teaspoon sea salt
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 2 cans (15 ounces each) pinto beans, rinsed and drained
  • 1/2 cup water
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice

Directions

  • Heat olive oil in a medium saucepan over medium heat.
  • Add chopped onion and salt. Cook for 5 to 8 minutes until softened and translucent.
  • Stir in garlic, chili powder, and cumin. Cook for about 30 seconds until fragrant.
  • Add drained pinto beans and water. Stir well, cover, and cook for 5 minutes.
  • Reduce heat to low and uncover. Mash the beans using a potato masher or fork until you reach your desired consistency.
  • Continue cooking uncovered for about 3 minutes, stirring frequently.
  • Remove from heat and stir in chopped cilantro and lime juice.
  • Taste and adjust salt or lime juice if needed. Serve warm.
