Ingredients

For the Ravioli Dough

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 teaspoon olive oil
  • ½ teaspoon salt
  • Extra flour for dusting

For the Cheese Filling

  • ½ cup whole milk ricotta cheese
  • ¼ cup shredded mozzarella cheese
  • ¼ cup shredded provolone cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 large egg
  • ¾ teaspoon dried parsley
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Water for sealing the edges

For the Sauce

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 3 tablespoons basil pesto
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1⅓ cups marinara sauce

Directions

  • In a large bowl or on a clean work surface, combine the flour and salt. Make a well in the center and add the eggs and olive oil.
  • Gradually mix the flour into the eggs until a dough forms.
  • Knead the dough for 8–10 minutes until smooth and elastic.
  • Wrap the dough and let it rest for 30 minutes at room temperature.
  • While the dough rests, combine the ricotta, mozzarella, provolone, Parmesan, egg, parsley, salt, and black pepper until smooth.
  • Divide the dough into four portions and roll each piece into very thin sheets.
  • Place small spoonfuls of filling about 1 inch apart on one sheet.
  • Lightly brush water around each filling mound.
  • Cover with another sheet of dough and gently press around the filling to remove air pockets and seal.
  • Cut into individual ravioli using a knife or ravioli cutter.
  • Bring a large pot of salted water to a boil.
  • Cook the ravioli for 4–6 minutes or until they float to the surface.
  • Meanwhile, heat olive oil in a skillet over medium heat.
  • Add garlic and cook until fragrant.
  • Stir in pesto and heavy cream, then simmer for several minutes.
  • Whisk in the Parmesan cheese until melted and smooth.
  • Warm the marinara sauce separately.
  • Drain the cooked ravioli and divide among serving plates.
  • Spoon marinara sauce over the ravioli, then drizzle with the creamy pesto sauce.
  • Serve immediately with extra Parmesan if desired.
