Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 (15-ounce) can black beans, drained and rinsed
- 4 green onions, thinly sliced
- ¼ cup fresh cilantro, chopped
- ¼ cup extra-virgin olive oil
- Juice of 2 fresh limes
- 2 teaspoons ground cumin
- 1 teaspoon salt
- ½ teaspoon red pepper flakes (optional)
- ¼ teaspoon black pepper
- ½ cup crumbled feta cheese (optional)
- ½ cup canned chickpeas, drained (optional)
Directions
- Rinse the quinoa thoroughly under cold water.
- Add the quinoa and water to a saucepan and bring to a boil.
- Reduce the heat to low, cover, and simmer for 12 to 15 minutes until the water is absorbed and the quinoa is tender.
- Remove from the heat and let the quinoa cool for about 10 minutes.
- In a small bowl, whisk together the olive oil, lime juice, cumin, salt, red pepper flakes, and black pepper.
- In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, black beans, green onions, and cilantro.
