  • ¼ teaspoon ground cumin
  • ¼ teaspoon ancho chili powder
  • ⅛ teaspoon smoked paprika
  • Dash of cayenne pepper (optional)
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon salt, plus more to taste
  • 12 ounces full-fat evaporated milk
  • 8 ounces freshly grated sharp cheddar cheese
  • Corn chips, for serving

Directions

  • Melt butter in a large pot or skillet over medium heat.
  • Add diced onion and cook until softened and translucent, about 5 minutes.
