- ¾ cup brown sugar
- ¼ cup water
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ¾ cups all-purpose flour
- ½ cup white sugar
- 2 teaspoons pumpkin pie spice
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon baking powder
Directions
- Preheat the oven to 350°F (175°C). Grease 14 muffin cups or line them with paper liners coated with cooking spray.
- In a large bowl, combine the pumpkin puree, melted butter, brown sugar, water, eggs, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk together the flour, white sugar, pumpkin pie spice, salt, baking soda, cinnamon, and baking powder.
