Ingredients
- 1 (4 pound) bone-in prime rib roast, at room temperature
- 1/4 cup unsalted butter, softened
- 1 tablespoon freshly ground black pepper
- 1 teaspoon herbes de Provence
- Kosher salt, to taste
Directions
- Place the prime rib on a plate and allow it to come to room temperature for 2–4 hours (6 hours is ideal).
- Preheat the oven to 500°F (260°C).
- In a small bowl, mix the softened butter, black pepper, and herbes de Provence. Spread evenly over the roast and season generously with kosher salt.
- Roast the 4-pound prime rib in the preheated oven for 20 minutes. For different-sized roasts, multiply the weight in pounds by 5 minutes to calculate the roasting time.
- Turn off the oven without opening the door and leave the roast inside for 2 hours, allowing residual heat to finish cooking.
- Remove the roast, slice, and serve immediately.
