Pozole Recipe
This comforting pozole recipe is a traditional Mexican-style soup made with tender shredded chicken, hearty hominy, and gently simmered spices that create a deep, warming flavor. This version works beautifully as a chicken pozole recipe and can easily be adapted into red pozole, green pozole, or even a vegetarian pozole by adjusting the protein and seasonings. Ingredients
- 4 tablespoons vegetable oil, divided
- 2½ pounds skinless, boneless chicken breast
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 2½ quarts chicken broth
- 3 cups water
- 4 tablespoons chili powder, adjust to taste
- 2 teaspoons salt, adjust to taste
- 1 teaspoon dried oregano, crumbled
- 3 cups white hominy, rinsed and drained
- 10 tostada shells, for serving
- Optional garnishes: sliced radishes, shredded lettuce or cabbage, chopped onion, fresh cilantro, lime wedges
Directions
- Heat 2 tablespoons of vegetable oil in a large deep pot or skillet over medium-high heat.
- Add the chicken breasts and cook for 18–20 minutes, turning occasionally, until fully cooked and no longer pink inside.
- Remove the chicken from the pot, let it cool slightly, then shred with two forks and set aside.
- In the same pot, add the remaining 2 tablespoons of oil.
- Add the chopped onion and minced garlic and cook for about 5 minutes, stirring often, until soft and fragrant.
- Return the shredded chicken to the pot.
- Pour in the chicken broth and water, stirring gently.
- Add the chili powder, salt, and dried oregano, mixing well so the spices blend evenly into the broth.
- Reduce the heat to low, cover, and simmer for about 90 minutes to build deep flavor.
- Stir in the hominy and cook uncovered for another 15 minutes until heated through and tender.
- Taste and adjust seasoning with additional salt or chili powder if needed.
- Serve hot with tostada shells and your preferred garnishes.
