Ingredients

1 chicken stock cube (or 2 tsp powder)
1 beef stock cube (or 2 tsp powder)
2¼ cups (565 ml) boiling water
4 tbsp (60 g) unsalted butter
4 tbsp all-purpose flour
½ tsp onion powder (optional; can substitute with garlic powder)
¼ tsp finely ground black pepper
Salt, to taste

Optional:
1 tsp dark soy sauce for extra color and depth
Cornstarch (2½ tbsp mixed with 3 tbsp water) for gluten-free version

Directions

  • Dissolve the chicken and beef stock cubes in the boiling water, stirring until fully combined.
  • Melt the butter in a saucepan over medium heat.
  • Add the flour, onion powder, and black pepper to the butter and stir to form a roux. Cook briefly until combined.
  • Slowly pour in half of the stock liquid while whisking constantly; the mixture will thicken quickly.
  • Add the remaining stock liquid and stir for 1.5–2 minutes until the gravy is smooth and pourable.
  • Taste and adjust seasoning with salt (and soy sauce if using). Thin with a little water if the gravy is too thick.
  • Serve immediately over mashed potatoes, roasted meats, sausages, chicken, beef, lamb, or vegetables.

Notes & Tips

  • Consistency: Gravy thickens as it cools; add a bit of water if needed.
  • Make ahead: Refrigerate for up to 5 days or freeze. Reheat gently and whisk in water to restore texture.
  • Gluten-free option: Use a cornstarch slurry instead of flour; mix with hot stock before adding to the butter.
  • Extra flavor: Onion or garlic powder adds subtle depth; dark soy sauce enhances color and richness if only using chicken stock.
