Ingredients

  • 1 cup cake flour
  • 3/4 cup caster sugar
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 13 tablespoons unsalted butter, softened
  • 3 large eggs, at room temperature
  • 3 tablespoons milk, at room temperature
  • 1 1/2 teaspoons vanilla extract

Directions

  1. Preheat the oven to 180°C / 350°F. Grease and lightly flour a loaf pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, lightly whisk the eggs, milk, and vanilla extract.
  4. Add the butter and half of the egg mixture to the dry ingredients. Beat until just combined, then increase the speed and beat for 1 minute.
  5. Add the remaining egg mixture in two additions, beating briefly after each addition.
  6. Transfer the batter to the prepared pan and smooth the top evenly.
  7. Bake for 50–55 minutes, or until a skewer inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
