Ingredients

  • 3 tablespoons canola oil
  • 6 green onions, sliced, white parts and tops separated
  • 2 cloves garlic, crushed
  • 1 shredded, cooked whole chicken breast
  • Salt and pepper to taste
  • 1 cup salsa
  • 1/2 (12 ounce) package tortilla chips
  • 1 (8 ounce) package shredded Cheddar/Monterey Jack cheese blend
  • 1/2 large tomato, diced

Directions

  • Preheat the oven to 350°F (175°C) and gather all ingredients.
  • Heat canola oil in a deep 12-inch skillet over medium heat.
  • Add the white parts of the green onions and crushed garlic, then cook and stir until the onions become tender.
  • Add the shredded chicken to the skillet and season with salt and pepper. Toss well to coat.
  • Stir in the salsa and mix until the chicken is evenly coated with the sauce.
  • Arrange tortilla chips evenly on a large baking sheet.
  • Spoon the chicken mixture over the tortilla chips and spread it evenly.
  • Sprinkle the shredded Cheddar and Monterey Jack cheese blend over the top, then add the diced tomato.
  • Bake in the preheated oven for about 10 minutes or until the cheese is fully melted.
