Ingredients

  • 2 tablespoons white wine
  • 2 teaspoons olive oil
  • 6 skinless, boneless chicken breast halves
  • 3 cloves garlic, minced
  • ½ cup diced onion
  • 3 cups chopped tomatoes
  • ½ cup white wine
  • 2 teaspoons chopped fresh thyme
  • 1 tablespoon chopped fresh basil
  • ½ cup Kalamata olives
  • ¼ cup chopped fresh parsley
  • Salt and ground black pepper, to taste

Directions

  • Heat 2 tablespoons of white wine and the olive oil in a large skillet over medium heat.
  • Add the chicken breasts and cook until golden brown, about 4 to 6 minutes per side. Remove the chicken from the skillet and set aside.
  • Add the minced garlic to the pan drippings and sauté for about 30 seconds.
  • Add the diced onion and cook until tender, about 3 minutes.
  • Stir in the chopped tomatoes and bring the mixture to a boil.
  • Reduce the heat to low, add ½ cup white wine, and simmer for 10 minutes.
  • Add the fresh thyme and basil, then simmer for another 5 minutes.
  • Return the chicken to the skillet, cover, and cook over low heat until the chicken is cooked through and no longer pink inside.
  • Add the Kalamata olives and fresh parsley, then cook for 1 minute.
  • Season with salt and black pepper to taste, then serve hot.
