- ½ small yellow onion, finely diced
- 4 garlic cloves, minced
- ¼ teaspoon crushed red pepper flakes
- 2 tablespoons tomato paste
- ½ cup dry white wine
- 2 cups chicken broth
- ⅔ cup sun-dried tomatoes, sliced
- ½ teaspoon Italian seasoning
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese (plus extra for serving)
- Fresh parsley, finely chopped, for garnish
Directions
- Slice the chicken breasts horizontally to make 8 thin cutlets. Season both sides with salt and pepper.
- Place the flour in a shallow dish and dredge each chicken cutlet, shaking off excess flour.
- Heat a large skillet over medium-high heat. Add 2 tablespoons butter and 1 tablespoon oil. Once melted and foamy, cook four cutlets until golden brown on both sides (about 4–5 minutes per side). Transfer to a plate. Repeat with another 2 tablespoons butter and 1 tablespoon oil for the remaining cutlets.
- In the same pan, melt the remaining 2 tablespoons butter. Add diced onion and cook for 2 minutes until translucent. Stir in garlic, red pepper flakes, and tomato paste. Cook for 1 minute until fragrant and slightly darkened.
- Pour in the white wine to deglaze the pan, scraping up any browned bits. Let it reduce by half.
- Stir in chicken broth, sun-dried tomatoes, and Italian seasoning. Bring to a gentle simmer. Add the cooked chicken and its juices back into the skillet. Let it simmer for 5 minutes to combine the flavors.
