Ingredients
- 5 1/2 ounces manicotti pasta
- 1 pint part-skim ricotta cheese
- 8 ounces shredded mozzarella cheese
- 3/4 cup grated Parmesan cheese, divided
- 2 large eggs
- 1 teaspoon dried parsley
- Salt and ground black pepper to taste
- 1 (16 ounce) jar spaghetti sauce
Directions
- Preheat the oven to 350°F (175°C). Gather and prepare all ingredients.
- Bring a large pot of salted water to a boil and cook manicotti pasta for 10 to 12 minutes until al dente. Drain and rinse with cold water.
- In a large mixing bowl, combine ricotta cheese, mozzarella cheese, 1/2 cup Parmesan cheese, eggs, dried parsley, salt, and black pepper. Mix until well combined.
- Spread about 1/2 cup of spaghetti sauce on the bottom of a baking dish.
- Fill each cooked manicotti shell with about 3 tablespoons of the cheese mixture and place them in the dish over the sauce.
- Pour the remaining spaghetti sauce evenly over the stuffed pasta.
- Sprinkle the remaining Parmesan cheese over the top.
- Bake in the preheated oven for about 45 minutes or until the dish is hot and bubbly.
- Remove from the oven and allow it to rest briefly before serving.
