Ingredients
- 1 cup white glutinous sweet rice
- ⅔ cup water
- ⅔ cup unsweetened coconut milk
- ¼ cup sugar
- ½ teaspoon salt
- 2 to 3 ripe mangoes, sliced
Coconut Sauce
- ½ cup unsweetened coconut milk
- ¼ teaspoon sugar
- ¼ teaspoon salt
- 1 teaspoon cornstarch
- 1 tablespoon water
Directions
- Rinse the glutinous rice with cold water until the water runs nearly clear.
- Add the rice and ⅔ cup water to a rice cooker and cook according to the manufacturer’s instructions.
- While the rice cooks, combine ⅔ cup coconut milk, ¼ cup sugar, and ½ teaspoon salt in a saucepan.
- Heat over medium heat until the mixture begins to simmer, then remove from the heat.
- Transfer the cooked rice to a bowl and pour the sweetened coconut milk mixture over it.
- Cover and let the rice sit for 15 to 20 minutes so it can absorb the coconut milk.
- Gently fold the rice once or twice to distribute the liquid evenly.
- To make the coconut sauce, combine ½ cup coconut milk, ¼ teaspoon sugar, and ¼ teaspoon salt in a saucepan.
- Bring to a gentle simmer over medium heat.
- Mix the cornstarch and water in a small bowl to create a slurry.
- Stir the slurry into the coconut milk mixture and cook until the sauce thickens.
- Arrange the sticky rice on serving plates.
- Add sliced mangoes alongside the rice.
- Drizzle the coconut sauce over the top and serve.
