Ingredients

  • 8 ounces dry lasagna noodles
  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 6 ounces Italian sausage, casing removed
  • 1 cup diced yellow onion
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 1 (24-ounce) jar marinara sauce
  • 4 cups chicken broth
  • 2 1/2 cups water
  • 12 ounces ricotta cheese
  • 3 ounces mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Directions

  1. Bring a large pot of lightly salted water to a boil. Cook the lasagna noodles until just tender, then drain and cut into bite-sized pieces.
  2. Heat the olive oil in a large soup pot over medium heat. Add the ground beef and Italian sausage, breaking it apart as it cooks, until fully browned.
  3. Add the onion and garlic to the pot and cook until softened. Stir in the tomato paste, red pepper flakes, oregano, black pepper, and salt.
  4. Pour in the marinara sauce, chicken broth, and water. Bring to a gentle boil, then reduce the heat and simmer for 30 minutes.
  5. Stir the cooked noodle pieces into the soup and cook for an additional 8–10 minutes, until tender.
  6. In a small bowl, mix together the ricotta, mozzarella, and Parmesan cheese.
  7. Serve the soup hot with a spoonful of the cheese mixture on top and garnish with fresh parsley.
