Lasagna Soup Recipe

Ingredients
- 8 ounces dry lasagna noodles
- 2 tablespoons olive oil
- 1 pound lean ground beef
- 6 ounces Italian sausage, casing removed
- 1 cup diced yellow onion
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons salt
- 1 (24-ounce) jar marinara sauce
- 4 cups chicken broth
- 2 1/2 cups water
- 12 ounces ricotta cheese
- 3 ounces mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Directions
- Bring a large pot of lightly salted water to a boil. Cook the lasagna noodles until just tender, then drain and cut into bite-sized pieces.
- Heat the olive oil in a large soup pot over medium heat. Add the ground beef and Italian sausage, breaking it apart as it cooks, until fully browned.
- Add the onion and garlic to the pot and cook until softened. Stir in the tomato paste, red pepper flakes, oregano, black pepper, and salt.
- Pour in the marinara sauce, chicken broth, and water. Bring to a gentle boil, then reduce the heat and simmer for 30 minutes.
- Stir the cooked noodle pieces into the soup and cook for an additional 8–10 minutes, until tender.
- In a small bowl, mix together the ricotta, mozzarella, and Parmesan cheese.
- Serve the soup hot with a spoonful of the cheese mixture on top and garnish with fresh parsley.
