Ingredients

4 lamb chops (about 4 ounces each)
1 tablespoon olive oil
1 clove garlic, minced
½ tablespoon crushed fresh rosemary leaves
Sea salt, to taste
Freshly ground black pepper, to taste
¼ cup mint jelly for serving

Directions

  • Preheat the oven to 425°F (220°C).
  • Trim any excess fat from the lamb chops while leaving a small amount for flavor. Lightly coat each lamb chop with olive oil.
  • Season the lamb chops evenly with minced garlic, crushed rosemary, sea salt, and black pepper.
  • Place the seasoned lamb chops in a cast iron skillet or oven safe pan.
  • Bake the lamb chops in the preheated oven for about 8 to 10 minutes until they are cooked through. The internal temperature should reach about 140°F (60°C) for medium well doneness.
  • Remove the lamb chops from the oven and cover them loosely with foil. Allow them to rest for 8 to 10 minutes before serving so the juices settle inside the meat.
  • Serve the lamb chops warm with mint jelly on the side.
