Ingredients
- 4 (8 oz) beef chuck eye steaks, well-trimmed & at room temperature
- Salt and freshly ground black pepper, to taste
- 2 tbsp olive oil
- 3 tbsp butter, divided
- 2 sprigs fresh thyme (optional)
- 2 cloves garlic, crushed
- 1 shallot, minced
- ½ cup beef broth
Instructions
- Pat steaks completely dry and season generously with salt and pepper.
- Heat olive oil in a skillet over high heat. Add steaks, then reduce heat to medium-high.
- Cook for 4 minutes, flip, then add 1 tbsp butter and thyme. Cook another 4–6 minutes depending on desired doneness.
- Remove steaks and let rest for 5 minutes.
- Using the same skillet, sauté garlic and shallot for 1–2 minutes with the remaining fat.
- Return heat to medium-low, add beef broth, and boil to reduce for about 3 minutes.
- Turn off heat, then whisk in the remaining 2 tbsp butter to finish the sauce.
- Serve the steaks topped with the rich pan sauce.
