Ingredients
1 tablespoon olive oil
2 pounds ground beef
1 large onion, diced
4 cloves garlic, minced
2 bay leaves
2 tablespoons paprika
2 teaspoons Italian seasoning
2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1 pinch cayenne pepper
1 quart chicken broth or water
1 jar marinara sauce (24 ounces)
1 can diced tomatoes (15 ounces)
1 cup water
2 tablespoons soy sauce
2 cups elbow macaroni
1/4 cup chopped parsley
1 cup shredded white cheddar cheese (optional)
Directions
- Heat olive oil in a large pot over medium high heat. Add the ground beef and diced onion and cook while stirring until the beef is browned and the onion becomes soft and translucent. Continue cooking until most of the liquid has evaporated. Add the minced garlic, bay leaves, paprika, Italian seasoning, salt, black pepper, and cayenne pepper. Stir the mixture and cook for a few minutes so the spices release their flavor.
- Pour in the chicken broth, marinara sauce, and diced tomatoes. Add one cup of water and stir well to combine everything. Mix in the soy sauce and bring the mixture to a gentle simmer. Reduce the heat and let the sauce cook for about 30 minutes so the flavors develop.
- Increase the heat slightly and bring the mixture back to a simmer. Stir in the elbow macaroni and cook while stirring occasionally until the pasta becomes tender. Remove the bay leaves and stir in the chopped parsley and shredded cheddar cheese if using. Cover the pot and let the goulash rest for a few minutes before serving.
