Ingredients

  • ½ cup extra-virgin olive oil
  • 2 garlic cloves, finely minced
  • 1 tablespoon chopped fresh rosemary (or 1 teaspoon dried)
  • 1 tablespoon chopped fresh thyme (or 1 teaspoon dried)
  • ¼ teaspoon freshly ground black pepper
  • 1 cup lukewarm water (110°F–115°F)
  • 2 ¼ teaspoons instant yeast (1 packet)
  • ¼ teaspoon sugar, honey, or maple syrup
  • 2 ½ cups all-purpose flour
  • 1 teaspoon fine sea salt

Directions

  • Warm olive oil in a skillet with garlic, rosemary, thyme, and pepper over low heat for 5–10 minutes until fragrant, ensuring the garlic does not brown. Let the oil cool.
  • In a bowl, combine warm water, yeast, and sugar. Stir gently and allow it to rest for 5 minutes.
  • Add 1 cup of flour and ¼ cup of the infused oil to the yeast mixture. Stir lightly and let rest for 5 minutes.
  • Mix in the remaining flour and salt, then knead the dough 10–15 times until smooth.
  • Place the dough into a lightly oiled bowl, cover, and let rise for 1–2 hours, or until doubled in size.
  • Preheat the oven to 450°F (232°C).
  • Grease a 9×13-inch baking sheet with 2 tablespoons of the infused oil.
  • Press the dough into the pan using your hands, then dimple the surface with your fingertips.
  • Drizzle the remaining infused oil over the top and allow the dough to rise for 20–30 minutes.
  • Bake for 15–20 minutes, or until the focaccia is golden brown. Let it cool slightly before slicing and serving.
