Ingredients

  • 1 tablespoon olive oil
  • ½ pound smoked sausage, sliced
  • 1 large onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • Salt to taste
  • ½ teaspoon Cajun seasoning, or as needed
  • 1 cup uncooked white rice
  • 1 (14.5-ounce) can diced tomatoes with juice
  • 1 tablespoon minced garlic
  • 2 cups chicken broth
  • 3 bay leaves
  • ¼ teaspoon dried thyme
  • 1 pound medium shrimp, peeled and deveined

Directions

  • Warm the olive oil in a large pot over medium heat, then add the sliced sausage. Cook for about 2 minutes to release its flavors.
  • Add the onion, bell pepper, and celery. Season with salt and Cajun seasoning. Cook for 6–8 minutes until the vegetables soften.
  • Mix in the rice, then pour in the tomatoes with their juice, garlic, broth, bay leaves, and thyme. Bring the mixture to a gentle simmer.
  • Lower the heat to medium-low, cover, and cook for 20 minutes.
  • Stir in the shrimp and cook uncovered for roughly 10 minutes, just until the shrimp turn pink.
  • Remove from heat and let the pot rest for 5 minutes. Discard the bay leaves before serving.
