Ingredients
- 1 tablespoon olive oil
- ½ pound smoked sausage, sliced
- 1 large onion, chopped
- 1 cup green bell pepper, chopped
- 1 cup celery, chopped
- Salt to taste
- ½ teaspoon Cajun seasoning, or as needed
- 1 cup uncooked white rice
- 1 (14.5-ounce) can diced tomatoes with juice
- 1 tablespoon minced garlic
- 2 cups chicken broth
- 3 bay leaves
- ¼ teaspoon dried thyme
- 1 pound medium shrimp, peeled and deveined
Directions
- Warm the olive oil in a large pot over medium heat, then add the sliced sausage. Cook for about 2 minutes to release its flavors.
- Add the onion, bell pepper, and celery. Season with salt and Cajun seasoning. Cook for 6–8 minutes until the vegetables soften.
- Mix in the rice, then pour in the tomatoes with their juice, garlic, broth, bay leaves, and thyme. Bring the mixture to a gentle simmer.
- Lower the heat to medium-low, cover, and cook for 20 minutes.
- Stir in the shrimp and cook uncovered for roughly 10 minutes, just until the shrimp turn pink.
- Remove from heat and let the pot rest for 5 minutes. Discard the bay leaves before serving.
