  • 1 andouille sausage, diced
  • 2 cups long-grain rice
  • 8 ounces chicken livers, minced
  • 4 cups chicken broth
  • 2 teaspoons kosher salt, or to taste
  • 1 large bay leaf
  • 1 dash Worcestershire sauce
  • 1/4 cup sliced green onions
  • 1/4 cup chopped Italian parsley

Directions

  1. Heat vegetable oil in a large deep pan over medium-high heat. Add diced pork and cook while stirring until it becomes well browned and releases its fat, about 5 to 7 minutes.
  2. Add the diced onion, celery, and green bell pepper. Cook and stir for about 5 minutes until the vegetables soften and become slightly translucent.
  3. Stir in paprika, cumin, black pepper, cayenne pepper, garlic powder, oregano, and thyme. Continue cooking for a few minutes so the spices release their aroma.
