Ingredients
- 8 ounces jalapeño peppers (8 to 12 medium)
- 1 cup granulated sugar
- ½ cup apple cider vinegar
- 1 teaspoon yellow or brown mustard seeds
- ¼ teaspoon celery seeds
- ¼ teaspoon ground turmeric
- ½ teaspoon kosher salt
Directions
- Trim the jalapeño peppers and thinly slice them crosswise.
- Add the granulated sugar, apple cider vinegar, mustard seeds, celery seeds, turmeric, and kosher salt to a small saucepan.
- Bring the mixture to a boil over medium heat, stirring occasionally until the sugar dissolves, about 4 minutes.
- Add the sliced jalapeños and boil, stirring frequently, until they become shiny and slightly shriveled, about 4 to 5 minutes.
- Use a slotted spoon to transfer the jalapeños to a clean glass pint jar.
- Continue boiling the vinegar mixture until it becomes syrupy and reduces by about one-third, about 5 to 10 minutes.
- Pour the syrup over the jalapeños, pressing them down so they are fully submerged.
- Let the cowboy candy cool to room temperature before serving or refrigerating.
