Ingredients

  • 1 ¼ cups whole wheat couscous
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
  • 3 tablespoons olive oil
  • 1 skinless, boneless chicken breast
  • Salt to taste
  • 1 tablespoon olive oil
  • ½ cup diced red onion
  • 1 cup chicken broth
  • ½ cup diced zucchini
  • ½ cup diced green beans
  • ½ cup diced red bell pepper
  • ¼ cup thinly sliced green onions
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground turmeric
  • 2 tablespoons chopped parsley
  • 2 tablespoons crumbled feta cheese
  • 1 pinch chili flakes

Directions

  • Place couscous in a heatproof bowl.
  • Add kosher salt, black pepper, cayenne pepper, and olive oil.
  • Stir until the couscous is evenly coated with oil, then set aside.
  • Season the chicken with salt on both sides.
  • Heat olive oil in a saucepan over high heat.
  • Add chicken and cook for 2 to 3 minutes on one side.
  • Flip the chicken and add diced onions.
  • Continue cooking for another 2 to 3 minutes while stirring the onions.
  • Remove chicken from the pan and let it cool slightly.
  • Cut the chicken into small cubes and return it to the saucepan.
  • Add chicken broth, zucchini, green beans, red bell pepper, green onions, smoked paprika, and turmeric.
  • Bring the mixture to a boil.
  • Pour the hot mixture over the couscous without stirring.
  • Cover the bowl tightly and let it sit for 5 minutes.
  • Remove the cover and stir in chopped parsley.
  • Fluff the couscous gently with a fork.
  • Serve warm topped with feta cheese, chili flakes, parsley, and a drizzle of olive oil.
