Directions

Preheat the oven to 325°F (165°C). Heat a Dutch oven or heavy oven-safe pot over medium-high heat and add olive oil. Sear the chuck roast for about 4 minutes on one side, then turn to brown all remaining sides. Remove the roast and set aside.
