Ingredients

  • 4 (4-ounce) Chilean sea bass fillets, about 1 inch thick
  • β…“ cup sake
  • β…“ cup mirin
  • β…“ cup miso paste
  • ΒΌ cup packed brown sugar
  • 3 tablespoons soy sauce
  • 2 tablespoons chopped green onions

Directions

  • Whisk together the sake, mirin, miso paste, brown sugar, and soy sauce in a bowl until smooth.
  • Place the Chilean sea bass fillets in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for 3 to 6 hours.
  • Preheat the oven broiler and position the oven rack about 6 inches from the heat source.
  • Remove the fish from the marinade and arrange the fillets on a baking sheet. Discard the used marinade.
  • Broil the sea bass for 7 to 9 minutes, or until the fish flakes easily with a fork and is lightly caramelized on top.
  • Sprinkle the cooked fish with chopped green onions and serve immediately.
