Ingredients

  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 inch piece fresh ginger, peeled and chopped
  • 4 cloves garlic, chopped
  • 1 green chile pepper, seeded and chopped (optional)
  • 3 tablespoons olive oil
  • 2 fresh bay leaves
  • 1 teaspoon chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Water as needed
  • 1 (15 ounce) can chickpeas, drained
  • 1 teaspoon fresh cilantro leaves for garnish

Directions

  • Place the chopped onion, tomato, ginger, garlic, and green chile pepper in a food processor and blend until a smooth paste forms.
  • Heat olive oil in a large skillet over medium heat.
  • Add bay leaves and cook for about 30 seconds until fragrant.
  • Pour the prepared paste into the skillet and cook until the mixture turns golden brown and the oil begins to separate, about 2 to 3 minutes.
  • Add chili powder, coriander powder, garam masala, turmeric powder, and salt, then cook while stirring for another 2 to 3 minutes.
  • Pour a small amount of water into the mixture to create a thick sauce and bring it to a boil.
  • Add the drained chickpeas and stir well to combine with the sauce.
  • Reduce the heat to medium and cook for 5 to 7 minutes until the chickpeas are heated through and the flavors blend together.
  • Garnish with fresh cilantro leaves before serving.
