Ingredients
- 2 cups oil for frying
- 30 (6 inch) corn tortillas, torn into strips
- 1/4 cup chopped onion
- 6 large eggs, lightly beaten
- 2 teaspoons salt
- 7 ounces Mexican style hot tomato sauce or salsa
- 1/2 cup water
- 1/2 cup shredded Monterey Jack cheese
Directions
- Heat oil in a large heavy skillet over medium heat until it reaches about 350°F (175°C).
- Add tortilla strips and chopped onion to the hot oil and fry until they become crisp and golden brown while stirring frequently.
- Remove the fried tortillas and onion and place them on a paper towel lined plate to drain excess oil.
- Carefully drain most of the oil from the skillet, leaving only a thin layer.
- Return the fried tortillas and onion to the skillet and place it over medium heat.
- Stir in the beaten eggs and season with salt. Cook while stirring until the eggs become firm.
- Add the tomato salsa and water, mixing well with the tortillas and eggs.
- Reduce the heat and let the mixture simmer for about 10 minutes until the sauce thickens.
- Sprinkle shredded Monterey Jack cheese on top and cook until the cheese melts.
