Ingredients
- Cooking spray
- 5 pounds chicken wings, separated at joints with tips discarded
- 3 tablespoons hot sauce
- Salt to taste
- Ground black pepper to taste
- 2 tablespoons vegetable oil
- 1 cup all purpose flour
For the glaze:
- 1/2 cup rice wine vinegar
- 1/2 cup packed brown sugar
- 3 garlic cloves, crushed
- 2 tablespoons minced fresh ginger
- 1 tablespoon Asian chili paste
- 1 tablespoon soy sauce
Directions
- Preheat the oven to 400°F (200°C) and line two baking sheets with aluminum foil. Lightly coat them with cooking spray.
- Place the chicken wings in a large bowl and season with hot sauce, salt, and black pepper.
- Add vegetable oil and toss the wings until evenly coated.
- Place the wings and flour into a large food safe plastic bag and shake well until the wings are fully coated with flour and no wet spots remain.
- Arrange the wings on the prepared baking sheets in a single layer, making sure the wings do not touch each other. Lightly spray the wings with cooking spray.
- Bake for 30 minutes, then flip the wings and continue baking for another 30 minutes until crispy and fully cooked.
- In a saucepan, whisk together rice wine vinegar, brown sugar, crushed garlic, minced ginger, chili paste, and soy sauce. Bring the mixture to a boil and then remove from heat.
- Place half of the baked wings in a large bowl and toss with half of the glaze until evenly coated.
- Transfer the glazed wings to a serving platter and let them sit for about 5 minutes so the sauce can absorb.
- Repeat the process with the remaining wings and glaze, then serve warm.
