Chicken Soup Recipe

Ingredients
- 1 whole chicken (about 3 pounds)
- 4 carrots, halved
- 4 stalks celery, halved
- 1 large onion, halved
- Water (enough to cover)
- Salt, to taste
- Pepper, to taste
- 1 teaspoon chicken bouillon granules (optional)
Directions
- Place the chicken, carrots, celery, and onion in a large soup pot.
- Add enough cold water to completely cover the chicken and vegetables.
- Bring to a boil over medium heat, then reduce to low and simmer uncovered for about 90 minutes, or until the chicken meat easily falls off the bone.
- Skim off any foam that rises to the surface while cooking.
- Remove the chicken from the pot and allow it to cool slightly.
- Shred the chicken into small pieces, discarding the skin and bones.
- Strain the cooked vegetables from the broth and set them aside.
- Rinse the soup pot, then pour the reserved broth back into it.
- Chop the vegetables into bite-sized pieces and return them to the pot along with the shredded chicken.
- Warm the soup over low heat until fully heated through.
- Season to taste with salt, pepper, and chicken bouillon.
- Serve hot, optionally garnished with fresh parsley and crackers.
