Ingredients
4 beef cube steaks (about ½ pound each)
2 ¼ cups all-purpose flour, divided
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon black pepper
¾ teaspoon salt
1 ½ cups buttermilk
1 tablespoon hot pepper sauce
1 large egg
2 cloves garlic, minced
3 cups vegetable oil or shortening for frying
4 cups milk (for gravy)
Salt and black pepper to taste

Directions
- Place each cube steak between plastic wrap and gently pound until about ¼ inch thick to tenderize and ensure even cooking.
- Add 2 cups of flour to a shallow bowl. In another bowl, mix baking powder, baking soda, black pepper, and salt. Add buttermilk, hot pepper sauce, egg, and minced garlic, then whisk until smooth.
- Heat oil in a deep skillet or cast iron pan to about 325°F (165°C).
- Dredge each steak in flour, then dip it into the buttermilk mixture, allowing excess to drip off. Coat the steak again in flour, pressing lightly so the coating sticks well.
- Place the coated steaks on a rack while preparing the remaining pieces.
- Fry the steaks in hot oil for about 3 to 5 minutes per side until golden brown and crispy. Remove and place on paper towels to drain excess oil.
- For the gravy, carefully drain most of the oil from the skillet, leaving about ¼ cup with the browned bits. Whisk in the remaining flour and cook for about 1 minute. Slowly add milk while whisking constantly. Simmer until thick and creamy, then season with salt and black pepper.
