Ingredients

1 pound boneless skinless chicken breasts, sliced into strips
6 tablespoons vegetable oil
2 bell peppers, thinly sliced
½ onion, thinly sliced
½ teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon dried oregano
Salt to taste
4 flour tortillas
2 cups shredded Monterey Jack cheese
2 cups shredded cheddar cheese
1 ripe avocado, sliced
2 scallions, thinly sliced
Sour cream for serving

Directions

  • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the sliced bell peppers and onion, season with salt, and cook for about 5 minutes until soft. Remove the vegetables from the skillet and set aside.
  • Add another tablespoon of oil to the skillet and place the sliced chicken in the pan. Season the chicken with chili powder, cumin, oregano, and salt. Cook while stirring occasionally until the chicken is golden and fully cooked. Remove the chicken from the skillet and set aside.
  • Heat a small amount of oil in the skillet again and place one flour tortilla in the pan. Sprinkle a generous layer of Monterey Jack and cheddar cheese on half of the tortilla. Add some cooked chicken, sautéed peppers and onions, sliced avocado, and scallions on top of the cheese.
  • Fold the tortilla over the filling and cook for about 3 minutes on each side until the tortilla is golden brown and the cheese melts completely.
  • Repeat the same process with the remaining tortillas and filling to prepare four quesadillas.
  • Slice the quesadillas into wedges and serve warm with sour cream.
