Ingredients
For the Dough
- 1¼ cups water
- 1 teaspoon salt
- 3 cups bread flour
- 1 teaspoon dry milk powder
- 1½ tablespoons granulated sugar
- 2 teaspoons active dry yeast
For the Filling
- ¾ cup pizza sauce
- 4 ounces pepperoni, chopped
- 1¼ cups shredded mozzarella cheese
- 2 tablespoons melted butter
Directions
- Add the water, salt, bread flour, dry milk powder, sugar, and active dry yeast to a bread machine in the order recommended by the manufacturer. Select the dough cycle and allow it to complete. If making the dough by hand, knead until smooth and let it rise until doubled in size.
- Preheat the oven to 350°F (175°C). Lightly grease a large baking sheet or line it with parchment paper.
- Transfer the prepared dough to a lightly floured surface and roll it into a 16 x 10-inch rectangle.
- In a small bowl, combine the chopped pepperoni and shredded mozzarella cheese.
- Spread the pizza sauce in a long strip down the center of the dough, leaving space around the edges. Evenly distribute the pepperoni and cheese mixture over the sauce.
- Using a sharp knife, cut diagonal strips about 1½ inches apart along both sides of the dough, stopping about ½ inch from the filling.
- Fold the strips over the filling in a crisscross pattern, alternating sides to completely enclose the filling. Pinch the ends together to seal the calzone.
- Brush the top of the calzone with melted butter for a rich, golden finish.
- Bake for 35 to 45 minutes, or until the crust is beautifully browned and cooked through.
- Let the calzone rest for 5 to 10 minutes before slicing. Serve warm with extra pizza sauce or marinara for dipping.
