Ingredients
- 5 pounds chicken leg quarters
- 2 gallons water
- 2 tablespoons minced garlic
- 2 tablespoons salt, or to taste
- 1 tablespoon garlic powder
- 1 chicken bouillon cube
- 4 large carrots, peeled and cut into large chunks
- 4 large potatoes, peeled and cut into large chunks
- 4 zucchini, cut into large chunks
- 1 chayote, peeled and cut into large chunks
- 1 large white onion, cut into large chunks
- ½ bunch fresh cilantro, chopped
Directions
- Place the chicken leg quarters in a large stockpot and pour in the water until the chicken is completely covered.
- Add the minced garlic, salt, and garlic powder. Cover the pot and bring everything to a boil over high heat.
- Reduce the heat to a gentle simmer and cook for 1 to 2 hours, or until the chicken is fully cooked and tender enough to easily pull away from the bone.
- Stir in the chicken bouillon cube until it dissolves completely into the broth.
- Add the carrots, potatoes, zucchini, chayote, and onion to the pot. Continue simmering over medium-low heat for 45 to 60 minutes, or until all the vegetables are fork-tender.
- Stir the chopped cilantro into the soup and let it simmer for another 5 minutes to infuse the broth with fresh flavor.
- Taste the broth and adjust the seasoning with additional salt if needed.
- Serve the caldo de pollo hot with lime wedges, warm corn tortillas, Spanish rice, or fresh avocado. For a heartier meal, you can also add cooked rice or cabbage before serving.
