Ingredients

For the Cabbage Rolls

  • ⅔ cup water
  • ⅓ cup uncooked white rice
  • 8 large cabbage leaves
  • 1 pound lean ground beef
  • ¼ cup finely chopped onion
  • 1 large egg, lightly beaten
  • 2 tablespoons condensed tomato soup
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

For the Sauce

  • 1 (10.5-ounce) can condensed tomato soup, remaining portion

Directions

  1. Bring the water to a boil in a small saucepan. Add the rice, reduce the heat to low, cover, and cook for about 20 minutes or until the rice is tender and the liquid has been absorbed. Let it cool slightly.
  2. Bring a large pot of lightly salted water to a boil. Carefully add the cabbage leaves and cook for 2 to 4 minutes until they become soft and flexible. Drain well and allow them to cool enough to handle.
  3. In a large mixing bowl, combine the cooked rice, ground beef, chopped onion, beaten egg, 2 tablespoons of condensed tomato soup, salt, and black pepper. Mix until all ingredients are evenly incorporated.
  4. Lay a cabbage leaf flat on a clean surface. Spoon about 2 tablespoons of the beef mixture near the base of the leaf. Fold the sides inward, then roll tightly from the bottom to create a secure cabbage roll. Repeat with the remaining filling and cabbage leaves.
  5. Arrange the stuffed cabbage rolls seam-side down in a large skillet or Dutch oven.
  6. Pour the remaining condensed tomato soup evenly over the cabbage rolls, spreading it to cover the tops.
  7. Cover the pan and bring the sauce to a gentle boil. Reduce the heat to low and simmer for about 40 minutes, occasionally spooning the sauce over the rolls, until the cabbage is tender and the beef is fully cooked.
  8. Serve the cabbage rolls hot with extra tomato sauce spooned over the top. Pair with mashed potatoes, crusty bread, or a fresh salad for a complete meal.
