Ingredients

These simple cake pop ingredients help create moist vanilla cake balls coated in smooth chocolate, perfect for parties, birthdays, and homemade dessert treats.

Cake Ingredients

  • 1 box vanilla or white cake mix (or one homemade 8-inch vanilla or white cake)
  • Ingredients required for the cake mix such as eggs, milk, butter, or oil
  • ¼ cup vegetable oil (only if using a boxed cake mix for extra moisture)

Vanilla Frosting Ingredients

  • ½ cup unsalted butter, softened to room temperature
  • 1 cup icing sugar (confectioners’ sugar), sifted
  • 1 teaspoon vanilla extract
  • 1 teaspoon milk (adjust as needed for smooth texture)

Chocolate Coating and Assembly

  • 3½ cups chocolate or candy melts (dark, milk, white, or assorted)
  • 40 cake pop sticks
  • Sprinkles or decorations of choice

Directions

  • Prepare the cake according to the package instructions or your homemade recipe. If using a boxed mix, add extra vegetable oil before mixing for a moister texture. Bake completely, then allow the cake to rest for about 15 minutes.
  • Run a knife around the edges of the pan, remove the cake, and place it into a large bowl. Once cool enough to handle, crumble it by hand into fine, even crumbs. Let the crumbs cool completely before adding frosting.
  • In a mixing bowl, add softened butter, icing sugar, vanilla extract, and milk. Beat with a hand or stand mixer on medium speed for about 4 minutes, until the frosting becomes light, smooth, and fluffy.
  • Add three-quarters of the frosting to the cake crumbs and mix gently until the mixture comes together and can be rolled into balls. If it feels dry, add the remaining frosting gradually. The texture should be moist, not sticky or mushy.
  • Scoop tablespoon-sized portions and roll them between your palms to form smooth balls. Place them on a lined tray. Chill in the freezer for 10 minutes or the refrigerator for 30 minutes. Roll again to smooth, then return to the freezer for another 30 minutes until firm.
  • Melt half of the chocolate or candy melts in a microwave-safe cup using 20-second intervals, stirring between each, until smooth and fluid. Melt more only as needed to maintain a thin consistency.
  • Dip the tip of each cake pop stick into the melted chocolate, then insert it halfway into a chilled cake ball to secure it. Repeat for all cake balls.
  • Hold the stick and dip each cake ball into the melted chocolate, swirling gently to coat completely. Tap lightly to remove excess coating, then add sprinkles before it sets.
  • Place the finished cake pops upright in a container filled with rice, styrofoam, or a box with small holes. Allow them to set completely at room temperature.
