Ingredients
6 garlic cloves, peeled and divided
¾ cup mayonnaise
6 tablespoons grated Parmesan cheese, divided
5 anchovy fillets, finely minced
1 tablespoon lemon juice, plus more to taste
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste
¼ cup olive oil
Directions
Finely mince 3 garlic cloves and place them in a small mixing bowl. Add the mayonnaise, 2 tablespoons of the Parmesan cheese, anchovies, lemon juice, Worcestershire sauce, and Dijon mustard. Stir until fully smooth and evenly combined, then season with salt and black pepper to taste. Cover and refrigerate until ready to use. For extra depth of flavor, warm the olive oil in a small skillet over medium heat. Add the remaining garlic cloves, cut into quarters, and cook until lightly golden. Remove and discard the garlic, then use the infused oil as desired alongside the dressing.
