Ingredients

1 ½ cups creamy peanut butter
1 cup butter, softened
½ teaspoon vanilla extract
4 cups sifted confectioners’ sugar, plus more if needed
4 cups semisweet chocolate chips
Toothpicks
Wax paper for lining baking sheets

Directions

  • Beat the peanut butter, softened butter, and vanilla extract together in a large bowl until light and fluffy.
  • Gradually add the sifted confectioners’ sugar and continue mixing until the mixture becomes firm and smooth. Add more sugar if needed until the dough holds its shape.
  • Roll the dough into small 1 inch balls and place them on a baking sheet lined with wax paper.
  • Insert a toothpick into the top of each peanut butter ball and place the tray in the freezer for about 30 minutes until firm.
  • Melt the chocolate chips in a double boiler or heatproof bowl over gently simmering water, stirring until smooth.
  • Hold each peanut butter ball by the toothpick and dip it into the melted chocolate, leaving a small circle of peanut butter visible on top.
  • Place the dipped buckeyes back on the lined baking sheet and carefully remove the toothpicks.
  • Refrigerate until the chocolate is set and the buckeyes are ready to serve.
