Ingredients

  • 1 pound Brussels sprouts (cleaned and trimmed)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3–4 slices bacon
  • 3 tablespoons balsamic vinegar
  • ¼ cup maple syrup
  • 1 teaspoon brown sugar
  • ½ teaspoon cayenne pepper (optional)

Directions

  • Preheat the oven to 400°F (200°C).
  • Trim the stems from the Brussels sprouts, remove any loose leaves, and cut each in half.
  • Bring a large pot of salted water to a boil. Add the Brussels sprouts and cook for 4–5 minutes.
  • Drain and transfer them to an ice bath to cool, then pat completely dry.
  • In a skillet, cook the bacon until crispy. Remove, crumble, and set aside, reserving the bacon grease.
  • Toss the dried sprouts in a bowl with bacon grease, salt, pepper, and garlic powder.
  • Place a baking sheet in the oven for 5 minutes to preheat, then spread the Brussels sprouts cut side down on the hot pan.
  • Roast for 25–30 minutes, shaking the pan halfway through, until golden brown and crispy.
  • In the same skillet used for the bacon, simmer the balsamic vinegar for about 5 minutes until reduced by half.
  • Stir in the maple syrup, brown sugar, and cayenne pepper. Simmer until slightly thickened.
  • Transfer the roasted Brussels sprouts to a large bowl, drizzle the glaze over them, and toss to coat.
  • Top with crumbled bacon before serving.
