Ingredients
- 1 pound pork sausage
- 3 medium beets, peeled and shredded
- 3 carrots, peeled and shredded
- 3 medium potatoes, peeled and cubed
- 1/2 head cabbage, shredded
- 1 cup diced tomatoes, drained
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 1 can tomato paste
- 8 3/4 cups water
- 3 cloves garlic, minced
- 1 teaspoon white sugar
- Salt to taste
- Black pepper to taste
- 1/2 cup sour cream
- Fresh dill or parsley for garnish
Directions
- Crumble the pork sausage into a skillet and cook over medium heat until browned.
- Fill a large pot with water and bring it to a boil.
- Add the cooked sausage to the pot.
- Stir in the shredded beets and simmer for 10 minutes.
- Add the carrots and potatoes and cook until the potatoes begin to soften.
- Add the shredded cabbage and diced tomatoes to the soup.
