Black Eyed Peas Recipe

Ingredients
- 1 pound dried black-eyed peas
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 5 cloves garlic, minced
- 1 pound smoked ham hocks (or smoked turkey)
- 6 cups water
- 1 tablespoon seasoned salt
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 teaspoon freshly ground black pepper
- ¼ teaspoon crushed red pepper
- 3 bay leaves
Directions
- Rinse black-eyed peas thoroughly and soak in water for at least 2 hours or overnight. Drain and set aside.
- Heat vegetable oil in a large heavy pot over medium heat. Add onion and garlic; sauté about 5 minutes until translucent.
- Add smoked ham hocks and water. Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
- Add soaked black-eyed peas, seasoned salt, onion powder, cumin, black pepper, crushed red pepper, and bay leaves. Bring back to a boil.
- Reduce heat, cover, and simmer for another 1 hour.
- Uncover and cook an additional 30 minutes, or until peas are tender.
- Remove bay leaves and ham hocks before serving. Serve hot.
