Ingredients

  • 1 pound beef short ribs
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, sliced
  • 1 clove garlic
  • 1 (12-fluid-ounce) can or bottle stout beer
  • 1 cup beef stock

Directions

  • Gather all the ingredients and pat the beef ribs dry.
  • Season the ribs evenly with salt and ground black pepper.
  • Dredge the ribs in flour, making sure they are lightly coated, then shake off any excess flour.
  • Heat the olive oil and butter in a Dutch oven or large skillet over medium-high heat.
  • Add the ribs and brown them for about 5 minutes per side. Remove the ribs and set them aside.
  • Add the sliced onion and garlic to the same pot. Cook and stir for about 5 minutes, or until the onion becomes tender.
  • Return the browned ribs to the pot.
  • Pour in the stout beer while scraping the browned bits from the bottom of the pot.
  • Add the beef stock and stir gently to combine.
  • Cover the pot and reduce the heat to low.
  • Simmer the ribs for about 2 hours, or until the beef is very tender and nearly falls off the bone.
  • Serve the beef ribs hot with the flavorful braising sauce.
