Ingredients

  • 2 pounds lean ground beef
  • 1/4 medium onion, finely chopped
  • 1 1/4 cups shredded cheddar cheese, divided
  • 1/2 cup sour cream
  • 1 tablespoon dried parsley
  • 1 tablespoon taco seasoning
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 2 1/2 cups enchilada sauce
  • 1 1/2 teaspoons chili powder
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 8 flour tortillas
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (4-ounce) can sliced black olives, drained

Directions

  1. Preheat oven to 350°F (175°C).
  2. Heat a large skillet over medium-high heat. Cook ground beef and onion until browned and crumbly, about 5–7 minutes. Drain excess grease.
  3. Stir in 1 cup of cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper. Cook until cheese melts and mixture is well combined.
  4. Add enchilada sauce, chili powder, garlic, and salt. Bring to a light boil, then reduce heat and simmer for about 5 minutes until slightly thickened.
  5. Spoon about 1/4 cup of the beef mixture down the center of each tortilla. Top with a small amount of black beans and black olives.
  6. Roll up the tortillas and place them seam-side down in a greased 9×13-inch baking dish.
  7. Pour remaining sauce evenly over the enchiladas and sprinkle with remaining cheese, beans, and olives.
  8. Bake for 20–22 minutes, until cheese is melted and sauce is bubbling.
  9. Let rest for 5 minutes before serving.
