Ingredients

  • 8 ounces jalapeño peppers (8 to 12 medium)
  • 1 cup granulated sugar
  • ½ cup apple cider vinegar
  • 1 teaspoon yellow or brown mustard seeds
  • ¼ teaspoon celery seeds
  • ¼ teaspoon ground turmeric
  • ½ teaspoon kosher salt

Directions

  • Trim the jalapeño peppers and thinly slice them crosswise.
  • Add the granulated sugar, apple cider vinegar, mustard seeds, celery seeds, turmeric, and kosher salt to a small saucepan.
  • Bring the mixture to a boil over medium heat, stirring occasionally until the sugar dissolves, about 4 minutes.
  • Add the sliced jalapeños and boil, stirring frequently, until they become shiny and slightly shriveled, about 4 to 5 minutes.
  • Use a slotted spoon to transfer the jalapeños to a clean glass pint jar.
  • Continue boiling the vinegar mixture until it becomes syrupy and reduces by about one-third, about 5 to 10 minutes.
  • Pour the syrup over the jalapeños, pressing them down so they are fully submerged.
  • Let the cowboy candy cool to room temperature before serving or refrigerating.
